Oatmeal is a go-to in our house, but it’s hard to avoid sugary stuff when preparing it. So, I started using garlic, salt and pepper as a base instead of brown sugar. Sound weird? Not really!
Oatmeal is a plain vessel and pairs well with most any flavor profile. This recipe is just one variation, too. Once you get it down, have fun! Try different spices or cheese – like Gorgonzola, Asiago or Pecorino – and you’ll have endless variety in a seemingly “boring” dish.
serves 2
1 cup of oats (not quick cooking)
2 cloves of garlic, sliced thinly
1 tablespoon olive oil
2 cups of milk (or your cook-safe dairy substitute)
1/2 teaspoon red pepper flakes
1/2 cup Parmesan cheese
1 teaspoon oregano
1/2 teaspoon sea salt
- Start with a pan on medium heat.
- Add 1/2 of the olive oil to the pan.
- Add sliced garlicĀ and red pepper flakes. Stir occasionally until garlic browns.
- Add in oats and let toast for 2 minutes, stirring frequently.
- Gradually add in milk, stirring constantly.
- Reduce to simmer and stir in cheese, oregano, and salt.
- Let simmer for 3-5 minutes, stirring occasionally.
